Mixed Vegetable Poha

Ingredients

  • 1 cup poha (beaten rice)
  • 1 cup mixed vegetable, chopped or grated (beans, carrot, cabbage etc)
  • 1/4 tsp salt

For Seasoning

  • 1 tsp oil
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/4 tsp mustard seeds
  • 1 tsp curry leaves
  • 2 green chillis, minced
  • 1/2 tsp peanuts

Method

  1. Boil the vegetables with the half the quantity of salt till tender and dry.
  2. Wash the poha and drain.
  3. Heat oil and fry the seasoning ingredients.
  4. Stir in the mixed vegetables, poha and the remaining quantity of salt. Mix the contents thoroughly and cook on a high flame for a few minutes. Then reduce the flame, mix the contents thoroughly, and cook for a few more minutes.
  5. Serve hot, garnished with chopped coriander leaves,
