Mixed Vegetable Poha
Ingredients
- 1 cup poha (beaten rice)
- 1 cup mixed vegetable, chopped or grated (beans, carrot, cabbage etc)
- 1/4 tsp salt
For Seasoning
- 1 tsp oil
- 1/2 tsp chana dal
- 1/2 tsp urad dal
- 1/4 tsp mustard seeds
- 1 tsp curry leaves
- 2 green chillis, minced
- 1/2 tsp peanuts
Method
- Boil the vegetables with the half the quantity of salt till tender and dry.
- Wash the poha and drain.
- Heat oil and fry the seasoning ingredients.
- Stir in the mixed vegetables, poha and the remaining quantity of salt. Mix the contents thoroughly and cook on a high flame for a few minutes. Then reduce the flame, mix the contents thoroughly, and cook for a few more minutes.
- Serve hot, garnished with chopped coriander leaves,
