Mixed Vegetable Pullao

Ingredients

  • 1 cup basmati rice
  • 100 gm mixed vegetable, cut into 1 inch pieces
  • 2 bay leaves, broken into pieces
  • 1 onion, ground
  • 1 tsp ginger-garlic-green chili paste
  • 1/2 tsp saffron, dissolved in a little hot water
  • 1/2 tsp cardamom powder
  • 1/2 tsp garam masala powder
  • 1 tsp oil

Method

    1. Wash and soak the rice for an hour. Cook till tender and dry along with half the quantity of salt.
    2. Cook the vegetables with the remaining quantity of salt till tender and dry.
    3. Heat oil and fry the bay leaves.
    4. Stir in the onion and the masala paste and fry.
    5. Add the vegetables, saffron water, cardamom powder, garam masala powder and the cooked rice. Mix the contents thoroughly, cover the pan with the lid and cook for a few more minutes
    6. Garnish the mixed vegetable pullao with cucumber slices and serve hot.
