Mixed Vegetable Pullao
Ingredients
- 1 cup basmati rice
- 100 gm mixed vegetable, cut into 1 inch pieces
- 2 bay leaves, broken into pieces
- 1 onion, ground
- 1 tsp ginger-garlic-green chili paste
- 1/2 tsp saffron, dissolved in a little hot water
- 1/2 tsp cardamom powder
- 1/2 tsp garam masala powder
- 1 tsp oil
Method
- Wash and soak the rice for an hour. Cook till tender and dry along with half the quantity of salt.
- Cook the vegetables with the remaining quantity of salt till tender and dry.
- Heat oil and fry the bay leaves.
- Stir in the onion and the masala paste and fry.
- Add the vegetables, saffron water, cardamom powder, garam masala powder and the cooked rice. Mix the contents thoroughly, cover the pan with the lid and cook for a few more minutes
- Garnish the mixed vegetable pullao with cucumber slices and serve hot.
