Mixed Vegetable Sambhar

Ingredients

  • 1/2 cup tur dal
  • 10-12 pieces mixed vegetables, cubed or cut into 1 inch pieces (ash gourd, bottle gourd, drumsticks, brinjal, radish etc.)
  • 1 cup tamarind juice
  • A pinch of turmeric powder
  • A pinch of asafoetida
  • 1 tsp coriander leaves
  • 1 tsp curry leaves
  • 1 tsp salt

For Roasting (Sambhar Powder)

  • 1/2 tsp chana dal
  • 1 tsp coriander seeds
  • 1/4 tsp fenugreek seeds
  • 3 red chilies

For Seasoning

  • 1 tsp ghee or oil
  • 1 tsp cumin and mustard seeds

Method

    1. Roast the dal slightly
    2. Mix the dal and the vegetables along with the required quantity of water and pressure cook.
    3. Roast the ingredients given under roasting and powder it.
    4. Heat oil or ghee in a pan and fry the seasoning ingredients.
    5. Stir in the tamarind juice, turmeric powder, asafoetida, coriander and curry leaves and salt.
    6. Add the roasted powder and the cooked dal. Mix the contents thoroughly and cook for 5 minutes.
    7. Serve hot sambhar with rice.
