Mutton Pullao
Ingredients
- 1 cup basmati rice
- 100 gm mutton, cut into small pieces
- 1/2 tsp garam masala powder
- 2 bay leaves
- 1 cup curd
- 1/4 tsp green cardamom powder
- I tsp ginger-garlic-green chili paste
- 2 onions, finely chopped
- 1/4 tsp salt
- 2 tsp oil
Method
- Wash and soak rice for 1 hour. Cook till half done.
- Mix the curd, garam masala powder, green cardamom powder, masala paste and half the quantity of salt till well combined.
- Marinate the mutton pieces in the above mixture for 2 hours.
- Heat 1 tsp oil in a 2 liter cooker and fry the onions. Stir in the mutton mixture and pressure cook.
- Heat the remaining quantity of oil in a pan and fry the bay leaves.
- Stir in the mutton mixture, half cooked rice and the remaining quantity of salt, cover the pan with the lid and cook on a slow fire stirring occasionally till the rice is tender and the contents dry.
- Garnish mutton pullao with tomato rings and serve hot.
