Ash Gourd Curry
Ingredients
- 1 cup ash gourd, chopped
- 1/2 cup curd
- 1/2 tsp ginger-garlic chili paste
- 1/4 tsp salt
- 2 tsp salt coriander leaves, chopped
For Seasoning
- 1/2 tsp ghee
- 1/2 tsp cumin and mustard seeds
Method
- Pressure cook the ash gourd with the half quantity of salt.
- Drain the ash gourd and mix it with the curd along with the remaining quantity of salt and the coriander leaves.
- Heat ghee and fry the seasoning ingredients.
- Add masala paste and fry.
- Finally add the ash gourd mixture and cook till the contents are thicker.
- Serve hot with rice or chapatti.
