Ash Gourd Curry

Ingredients

  • 1 cup ash gourd, chopped
  • 1/2 cup curd
  • 1/2 tsp ginger-garlic chili paste
  • 1/4 tsp salt
  • 2 tsp salt coriander leaves, chopped

For Seasoning

  • 1/2 tsp ghee
  • 1/2 tsp cumin and mustard seeds

Method

    1. Pressure cook the ash gourd with the half quantity of salt.
    2. Drain the ash gourd and mix it with the curd along with the remaining quantity of salt and the coriander leaves.
    3. Heat ghee and fry the seasoning ingredients.
    4. Add masala paste and fry.
    5. Finally add the ash gourd mixture and cook till the contents are thicker.
    6. Serve hot with rice or chapatti.
