Brinjal Curry
Ingredient
- 2 medium sized brinjals, cut into thin strips
- 2 small onions, sliced
- 1/2 tsp ginger-garlic green chili paste
- 1/4 tsp salt
- 2 tsp coriander leaves, chopped
For Seasoning
- 2 tsp oil
- 1/2 tsp chana dal
- 1/2 tsp urad dal
- 1/2 tsp cumin and mustard seeds
- 1/4 tsp fenugreek seeds
Method
- Heat oil in a pan and fry the seasoning ingredients.
- Add the masala paste and fry.
- Add brinjal, onion, coriander leaves, salt and sprinkle a little water over it. Mix the contents thoroughly, cover the pan with the lid and cook with occasional stirring till the contents are tender and dry.
- Serve hot with rice or chapati.
