Carrot Curry
Ingredients
- 1 cup carrot, chopped or grated
- 1 tsp moong dal
- 2 tsp coriander leaves, chopped
- 1/4 tsp salt
- 1 tsp lime juice
For Seasoning
- 1 tsp oil
- 1/2 tsp mustard and cumin seeds
- 1 tsp curry leaves
- 2 green chilies, minced
- 1/2 tsp ginger, grated
Method
- Heat oil in a pan and fry the seasoning ingredients.
- Add carrot, dal, coriander leaves and salt along with little quantity of water, mix the contents thoroughly, cover the pan with a lid and cook till the contents are tender and dry.
- When a vegetable is slightly cool, add lime juice and mix the contents thoroughly.
- Serve with rice or chapati or as a filling for a sandwich.
