Vegetables in Curd

Ingredients

  • 1 drumstick, cut into 1 inch pieces
  • 6-8 1 inch ash gourd pieces
  • 6-8 French beans cut into 1 inch pieces
  • 1 carrot, peeled and cut into 1 inch strips
  • 1 cup curd
  • 6. Serve with chapatti or rice.
  • 1 tsp freshly grated coconut
  • 2 tsp coriander leaves
  • 2 flakes garlic
  • 1/2 inch ginger
  • 2 green chilies
  • 1/4 tsp salt

For Seasoning

  • 1/2 tsp ghee
  • 1/2 tsp mustard and cumin seeds
  • 1 tsp curry leaves

Method

    1. Cook all the vegetables with half the quantity of salt.
    2. Grind coconut, coriander leaves, garlic, ginger and chilli to a fine paste.
    3. Heat ghee in a pan and fry the seasoning ingredients.
    4. Add the ground paste and fry.
    5. Stir in the cooked vegetables, curd and the remaining amount of salt. Cook for 5 minutes.
