Vegetables in Curd
Ingredients
- 1 drumstick, cut into 1 inch pieces
- 6-8 1 inch ash gourd pieces
- 6-8 French beans cut into 1 inch pieces
- 1 carrot, peeled and cut into 1 inch strips
- 1 cup curd
- 6. Serve with chapatti or rice.
- 1 tsp freshly grated coconut
- 2 tsp coriander leaves
- 2 flakes garlic
- 1/2 inch ginger
- 2 green chilies
- 1/4 tsp salt
For Seasoning
- 1/2 tsp ghee
- 1/2 tsp mustard and cumin seeds
- 1 tsp curry leaves
Method
- Cook all the vegetables with half the quantity of salt.
- Grind coconut, coriander leaves, garlic, ginger and chilli to a fine paste.
- Heat ghee in a pan and fry the seasoning ingredients.
- Add the ground paste and fry.
- Stir in the cooked vegetables, curd and the remaining amount of salt. Cook for 5 minutes.
